Sweet Potato Pear Crostini
Sweet potato has become my favorite starch replacement! Create mini Sweet Potato Pear Crostinis for not only an appetizing bite, but a beautiful bite! Finger food doesn’t have to weigh you down.
Ingredients:
1 sweet potato
1 pear
1 tbsp avocado oil
3 tbsp goat cheese
1 tbsp crushed almonds
Directions: Preheat oven to 440 degrees F. Line a baking sheet with parchment paper. Slice your sweet potato into thin slices. Place your sweet potato slices on the parchment paper and drizzle avocado oil. Bake on each side 15 minutes. Place baked slices in a serving dish and top with pear slices, goat cheese and almonds.
