Lemon Vinaigrette Kale Salad Recipe
Yummy Kale Salad Recipe! I always get asked how to get more kale into your diet? Well here is the trick, like you see in this recipe if you squeeze half a lemon onto your kale and massage it in, it really softens the kale and makes it easier to indulge! Let me know how you like this one! I suggest you pair this salad as a side with 4 oz of your favorite protein!
Ingredients:
4 cups chopped kale
1/2 avocado, diced
1/2 cup pomegranate arils
1/4 cup chopped pecans
1/4 crumbled goat cheese (optional)
1/2 lemon
Lemon Vinaigrette:
1/4 olive oil
1/4 cup apple cider vinegar
Juice of 1 lemon
1 pinch coconut sugar
Whisk all the ingredients for the vinaigrette in a small bowl and set aside.
Using a Large salad bowl start with the kale, squeeze 1/2 lemon on top and massage kale with your hands to soften it up a bit. Let it sit for about 5 minutes. Top with avocado, pomegranate, pecans and goat cheese. Pour vinaigrette on top and toss to combine!
