Baked Avocado Eggs – Healthy Breakfast Recipe

These baked avocado eggs are a quick healthy breakfast option! Move over boring scrambled eggs!

Ingredients:
1 avocado
2 eggs
2 tbsp chopped tomato
2 tbsp chopped onion
cilantro to garnish
salt and pepper to taste
Directions:
Cut the avocado in half and remove the pit. Scoop out a little of the avocado from the center to make more room for the egg. Place avocados 0n a parchment lined baking pan.
Crack an egg into each avocado half. Bake at 425 for 20 minutes. The eggs cooked for this long will make them well done, if you like your eggs less cooked, reduce the time. Top with tomato, onion, cilantro and salt and pepper to taste.
